Mixed Berry Sorbet (Serving Size 4-6)

Ingredients:
- ½ cup (125 ml) caster sugar
- 2 tbsp (30 ml) glucose
- 1 tbsp (15 ml) golden syrup
- ½ cup (125 ml) water
- 4 cups (1 l) mixed berries, puréed and strained
- Juice of ½ lemon
Instructions:
- Stir the caster sugar, glucose, golden syrup and water together in a Stainless Steel Saucepan.
- Cook over medium heat until small bubbles appear. This should take about 5 minutes.
- Pour the mixture into a bowl and allow to cool.
- Add puréed mixed berries and the juice of ½ lemon (strain before churning), then churn in an ice cream machine until smooth and frozen.
- Divide the mixture between dishes. Place in the freezer until ready to serve.
- Serve in Espresso Cups.
