This July, Calgary Stampede plays host to one of its most exclusive dining events. On July 4, acclaimed chef Darren MacLean welcomes guests to EIGHT—recently named the second-best new restaurant in North America—for an unforgettable evening celebrating the artistry of The Dalmore. Priced at $3,750 per person, the experience pairs a bespoke Canadian-inspired tasting menu with The Dalmore’s coveted Cask Curation Series – Port Edition. Limited to just 150 sets worldwide, the collection showcases the distillery’s renowned expertise in whisky making and cask maturation.

 

 

 

Guiding the evening is Emma Coady, National Single Malt Specialist for Whyte & Mackay Canada, who will lead guests through a curated lineup of exceptional expressions while sharing insights into the heritage, craftsmanship, and meticulous cask selection that have made The Dalmore one of Scotland’s most revered single malt whisky houses.

  • The Dalmore Cask Curation Series – Port Edition, Aged 27 Years
    The centrepiece of the tasting, finished in a rare 1997 single-harvest tawny port cask from Graham’s Port. Rich notes of fig, dark chocolate, manuka honey, and warming spice showcase the extraordinary influence of cask finishing.
  • The Dalmore Constellation Series 1989, Aged 22 Years
    A highly sought-after release from the legendary Constellation Collection, offering layers of honeyed orchard fruit, caramelized stone fruit, and milk chocolate.
  • The Dalmore Luminary No. 3
    A complex 17-year-old single malt matured across seven distinct cask types, revealing notes of butterscotch, baked apple, dark cacao, and Seville orange.
  • The Dalmore King Alexander III
    One of the distillery’s most iconic expressions, matured in six different cask types to create a rich profile of chocolate orange, toffee, red berries, and spice.
